Spicy Bacon & Sweet Potato Hash

Sweet, hot and smoky, mmm... This is divine scattered over a salad and could even make a breakfast of itself (though perhaps with a milder chilli!) with the addition of an egg or mushrooms and tomatoes! I love the gooey sweetness of sweet potato as it is, and in this recipe there's the heat and bite of the chilli, and let's face it bacon makes everything better! :D

Ingredients:    (feeds 2)

1 small sweet potato

1 small chilli, finely chopped / 1/2 tsp dried chilli flakes

1 tsp smoked paprika

black pepper

3-4 rasher of streaky bacon, chopped into lardons

oil for frying

1. Peel the sweet potato and chop into 1cm cubes.

2. Combine sweet potato, bacon, and chilli in a hot pan with a drizzle of oil to begin frying. Season with the pepper. The bacon will release more fat  as it cooks to keep things going, you shouldn't need salt as the bacon is already salty.

3. Sprinkle the paprika over the top and stir in. Toss and turn everything regularly to prevent any bits burning, for approx. 20 mins or until the sweet potato is soft and the bacon crisp.

4. Serve immediately and enjoy!

As with any chilli dishes, the variety you go for determines the heat and flavour that you'll get so you can have it as mild or hot as you like but it also means that you can experiment with different chillies for a different experience each time. we'd love to hear from you so let us know your favourite on The Waki Way Facebook page!
